Pinocchios Incredible Italian to expand footprint in downtown Greeley

It’s no secret Americans love to eat out.So much so that studies have reported that 56% of Americans say they eat out, get take out or have a meal delivered two to three times per week.Nearly 10% of people in the study said they eat out four to six times a week with 6% saying they eat out everyday.No matter how many times you eat out, finding new restaurants can be a challenge, especially if you’re looking for something in the downtown Greeley area.Annie Margaret Velazquez, founder of Pinocchios Incred...

It’s no secret Americans love to eat out.

So much so that studies have reported that 56% of Americans say they eat out, get take out or have a meal delivered two to three times per week.

Nearly 10% of people in the study said they eat out four to six times a week with 6% saying they eat out everyday.

No matter how many times you eat out, finding new restaurants can be a challenge, especially if you’re looking for something in the downtown Greeley area.

Annie Margaret Velazquez, founder of Pinocchios Incredible Italian, and her partner in business and life, Cecil Velazquez, are helping solve the dilemma of where to eat by adding another location to its family of restaurants in northern Colorado: Pinocchios Prime.

Pinocchios Prime will open in the former location of the Greeley Chophouse, 804 Eighth St., bringing another dining option to the downtown area.

“This won’t be fine dining, but it is beautiful casual dining that you can come in shorts and a t-shirt or come dressed up for a date night,” Cecil Velazquez said. “We just want that ambiance that when people come in they feel welcome and enjoy great food, great service, great ambiance.”

The new restaurant is expected to open in mid to late January, according to Annie Margaret Velazquez.

When not working on Pinocchios Prime, the couple is busy managing its location at 905 16th St. in Greely.

If you’re looking for a cozy, welcoming atmosphere where you can enjoy a meal with friends or family, Pinocchios Incredible Italian offers that and more.

Annie Margaret Velasquez founded the original Pinocchios in 2003 in Longmont with just a $15,000 loan.

“From day one when I wrote a check for food, I knew I would have to make enough to cover that check so I worked my ass off,” Annie Margaret Velazquez said. “I was cooking at night and waiting tables during the day.”

The hard work paid off when the Longmont restaurant moved to a larger building and the Pinocchios brand expanded to locations in Loveland, Brighton and then Greeley.

“We love Greeley. Everyone is friendly and there’s a sense of community and being close to the university feels nice,” Annie Margaret Velazquez said. “I just love cooking and I feel like the love shows through in the food.”

The restaurant’s menu is filled with mouth-watering appetizers like spicy toasted ravioli and Pinocchio Sticks as well as soup and salads, hand-tossed pizzas, classic Italian dishes, including Fettuccini Alfredo and homemade lasagna, as well as many other items.

“I learned a few basics — lasagna and spaghetti. And the menu just kind of evolved into what it is today,” Annie Margaret Velazquez said. “There’s traditional dishes and there’s completely original dishes.”

Unlike many restaurants, some sauces at Pinocchios are made to order.

“Our red sauces are made in batches for the day and our Alfredo is made to order. So if you order that dish, we make the Alfredo sauce for the dish,” Cecil Velazquez said.

The restaurant’s kids’ menu, for youngsters age 10 and younger, also features a nice variety of kid-approved dishes such as noodles and butter, pizza, and spaghetti and meatballs.

Diners can cap off their meals with a sweet treat.

Pinocchios’ dessert menu is comprised of traditional Italian Tiramisu, spumoni ice cream, Italian Lemon cake and cannoli to good ol’ American Kentucky Bourbon Pie, carrot cake and apple crisp.

For chocolate lovers, the restaurant’s Chocolate Walnut Torte, Chocolate Fudge Cake or Chocolate Bomb are sure to please your sweet tooth.

“Annie makes all of the desserts we offer,” Cecil Velazquez said. “Her cookies sell out really quick.”

For those who are more fans of breakfast than lunch or dinner, Pinocchios offers the Early Bird menu that features a variety of traditional favorites such as pancakes and French toast, omelets, benedicts and other breakfast options.

“I thought it would be cool to do breakfast and I just did it Saturday and Sunday and the first few months nothing really happened with it,” Annie Margaret Velazquez said. “So then I started baking banana bread and practiced flipping eggs and finally it started taking off. It turns out I love cooking breakfast.”

Her love of baking definitely is a benefit for customers since most breakfast entrees come with a side of pumpkin spice bread.

“It’s turned into one of our signature things,” Annie Margaret Velazquez said.

While the Loveland location is closed due to renovations, Annie Margaret Velazquez and her team still offers catering at off-site events around the Sweetheart City.

Annie Margaret Velazquez’s Loveland, Longmont, Brighton and two Greeley locations are just the tip of the iceberg for the restaurateur.

She is open to expanding Pinocchios from Cheyenne to Colorado Springs —and anywhere in between — through the restaurant’s franchise program.

Annie Marie Velazquez first noodled with the idea of franchising Pinocchios after a location she sold began to really struggle.

“They were changing things around and I wanted Pinocchios to be a brand and it was really important to me that the integrity of the menu stays,” she explained. “Franchising also generates income for me when I am ready to stop working the long hours and retire. And, I can leave this to my kids so that they can also have an income. It’s worked out great.”

While she’s open to franchising with people outside of the company, Annie Margaret Velazquez typically likes to work with helping employees purchase their own Pinocchios franchise.

“We did that in Longmont and it’s going perfectly. We are hoping to that here with the Greeley location,” she said.

Greeley’s Pinocchios Incredible Italian is open from 11 a.m. to 8 p.m. Tuesday, 8 a.m. to 8 p.m. Wednesday and Thursday, 8 a.m. to 8:30 p.m. Friday, 9 a.m. to 8:30 p.m. Saturday and 9 a.m. to 8 p.m. Sunday. The restaurant is closed on Monday.

Old Dominion, a multi-platinum-selling country group, will headline this year’s Greeley Stampede SuperStars+ Concert lineup, capping off the six-day series of well-known acts.

The Stampede on Saturday announced the 2024 lineup, which begins on June 28. Old Dominion will perform with country singer-songwriter Greylan James at 8 p.m. Saturday, July 6.

“We are really excited to bring Old Dominion to Northern Colorado,” Greeley Stampede music production chairman Cory Sample said in a news release. “They are a phenomenal band with many number-one hits and are very popular in our community.”

Old Dominion is currently the reigning six-time Academy of Country (ACM) and five-time Country Music Award (CMA) group of the year. The band took home their record-breaking sixth successive win for “Group of The Year” at the 2023 ACM Awards. They also earned nominations for Album of the Year and Vocal Group of the Year at the 2022 CMA Awards. During the latter, their win for Vocal Group of the Year marked their fifth straight award in the category.

Kicking things off on Friday, June 28 is Grammy-award-winning rapper T.I. His song catalog includes “Live Your Life,” “What You Know,” “24’s” and “Swagga Like Us.” He has sold more than 10 million albums in the United States and starred in the acclaimed film “ATL” in 2006.

Chris Young, Hailey Whitters, Cheap Trick, Romero, We the Kingdom, Colton Dixon, Coming Soon! and Zach Top will also perform at the Stampede, according to the release.

Young, a member of the Grand Ole Opry, is set to perform on June 29. He has more than 5 billion on-demand streams, 13 career No. 1 singles, 24 R.I.A.A.-certified projects and numerous ACM, CMA, American Music Awards and Grammy nominations. He won Performance of the Year and Collaborative Video of the Year at the Country Music Television Music Awards.

We the Kingdom are set to perform on June 30. The Christian band’s single “Holy Water” was at the top of the Christian radio charts for eight weeks, earning them a Dove Award for New Artist of the Year.

Per the release, one more SuperStar+ headliner will be announced soon.

“There is a lot behind the scenes that goes into booking the bands with many moving parts that don’t always sync,” Sample said in the release. “As soon as we are able to, we will announce the final headliner to complete the series. We know that the community is anxious to know the complete lineup, so we will do everything we can to get that out as soon as possible.”

The concert series is presented by Power Services Company.

The popular SuperStar+ Concert Series package returns this year and will be available starting at 10 a.m. Feb. 21. The concert package includes one ticket to all six of the SuperStar+ concerts at the 2024 Stampede. Packages will start at $150, which is only $25 per ticket. Prices are for a limited time, while supplies last.

In March, the CorKat Locals Stage and CIVITAS Park Stage lineups are scheduled to be announced.

Tickets to the PRCA Pro Rodeo Series, PRCA Xtreme Bulls, Demolition Derby, American Bullfighting and Heritage of Mexico Rodeo will also be available online starting at 10 a.m. Feb. 21. Individual concert tickets will be available the following week at 10 a.m. Feb. 28 starting at $40 per concert.

All tickets are available for purchase at GreeleyStampede.org. The Stampede office is currently under construction. Limited office hours will start in March for those wanting to purchase tickets in person. Ticket prices will increase on May 1.

Standing-room-only tickets will only be available as printed tickets this year, meaning mobile tickets will not be available or accepted for the tickets.

“You can still purchase tickets online for SRO,” Stampede ticket manager Katie Baker stated in the release. “If you purchase SRO (standing-room-only) tickets, we will mail them to you. The change is in response to the numerous ticket scams we experienced last year in the SRO area. We encourage our guests to be vigilant and only purchase tickets from the Greeley Stampede.”

The Stampede reminds people to not accept any digital, print-at-home or mobile tickets for the standing-room-only area as they will not be valid tickets.

University of Northern Colorado announces Ice Spice won’t perform at spring concert

A popular rap artist will not perform at the University of Northern Colorado in the spring because of a scam involving a third-party vendor in charge of the booking, a UNC organization said this week.

Ice Spice was previously announced as the headline act for UNC’s annual Spring Concert and was scheduled to perform Wednesday, April 3, according to UNC’s University Program Council.

The UPC promoted Ice Spice’s headlining show in a teaser video on social media but later learned the booking was not legitimate and the vendor was the victim of a scam, according to a post Monday on the organization’s Instagram account.

The UPC is a student-fee-funded organization of student coordinators and volunteers who plan concerts, lectures and special events for students and the UNC community.

UNC Director of News and Public Relations Deanna Herbert said Tuesday afternoon the university did not incur any costs working with the vendor.

Herbert said the vendor is MoneyGang Entertainment, a Denver-based record label, according to an online search. Herbert said MoneyGang Entertainment was connected with the artists booked for last year’s spring concert, so the university had previous knowledge of the label.

For the April 2023 concert, special guest Leah Kate did not perform due to an unforeseen scheduling conflict, according to the UPC Instagram.

“The reason the university chose to use a third-party vendor was to bring a larger concert to campus while mitigating financial risk to the university,” Herbert wrote in an email Wednesday afternoon. “Under the contract we signed, the vendor assumed the cost, including the artist’s booking fee and publicity, and the university had a potential to share revenue from ticket sales.”

The Mirror, an online publication for UNC, questioned the validity of Ice Spice’s appearance in a short story on Jan. 26 announcing the concert. The story said there appeared to be inconsistencies surrounding the performance with the wrong record label listed on a promotional poster.

“No university officials have confirmed her performance yet,” The Mirror reported.

Ice Spice is the professional name of 24-year-old Isis Naija Gaston, who was born in the Bronx, a borough of New York City, and began a music career while in college in 2021, according to her page on music service YouTube Music.

Herbert and UPC said it’s unknown if there will be enough time to find another act for the concert.

“The UPC is exploring options and will continue planning for additional spring programs and events,” the organization said in its Instagram post. “Thank you for your understanding.”

Herbert said in a statement Tuesday the UPC learned the day after announcing the booking that it was not legitimate and the vendor had been scammed.

More than 900 likes and 73 comments responded to UPC’s post Monday announcing the scam and the change.

Reactions among the comments ranged from requesting other acts to showing support for the turn of events.

While a few advocated for The Burroughs, a soul music group from Greeley to fill in, another comment suggested the UPC improve its research before announcing acts.

Other commenters were more supportive and understanding that scams are part of the booking process.

“Thanks for letting us know!! Not your fault at all. Glad it didn’t end up costing anyone anything!! No big deal,” amyjr8fan commented.

GREELEY, Colo. — A winter storm that began Friday and continued overnight into Saturday left Greeley with its largest snowfall during a single event since 2006.

Initial totals showed Greeley received 12 inches of snow between 8 p.m. Friday and 1:30 a.m. Saturday due to a localized band of snow that sat over the area for hours. The highest reported total went up to 13.5 inches, which is currently the city's seventh-largest two-day on record.

9NEWS Meteorologist Chris Bianchi says that Greeley saw about 40% of its annual snowfall during the six hours the band was dumping snow. For the rest of the season combined, only 11.7 inches have fallen.

The band of snow that sat over downtown Greeley was so localized that just five miles south, there were reports of as little as a few inches were reported.

The final total could grow as light to moderate snow is expected to fall most of Saturday along the Front Range.

A Winter Strom Warning issued for Saturday includes the Greeley area.

Most areas will probably see 1-4 inches of additional accumulation before the snow ends around midnight Saturday. However, a few areas south and east of town could see a bit more than that.
